Vietnamese turmeric fish with noodles (Cha Ca La Vong) is a delicious and iconic dish of Hanoi.

Chunks of flavourful fish are plated on a bed of aromatic green scallion and dill, boasting a unique dining experience. Served on a bed of rice vermicelli.

  • 1 packet (200g) chickpea tempeh (cut into 12)
  • 7 stalks scallion (cut into 3inch length)
  • 1 punnet dill (cut into 3cm length – discard thick stalk)
  • 3 stalks coriander (cut into 3cm length – discard roots)
  • Juice of half a lime
  • 2 tbsp olive oil
  • 1 packet Vietnamese rice vermicelli (boiled according to instruction)

For Marinade

  • 3 stalks scallion, chopped to be pounded with mortar and pestle
  • 4 cloves garlic to be pounded with mortar and pestle
  • ½ tsp salt to be pounded with mortar and pestle
  • 2 tbsp turmeric powder
  • 1 tbsp curry powder
  • 1 tbsp sugar
  • 3 tbsp vegan fish sauce (refer below)
  • 1 punnet dill, chopped and discard thick stalk
  • 3 tbsp olive oil

For Sauce (mix all in a jar)

  • 1 red chili, minced
  • 2 cloves garlic, minced
  • 1 tbsp white vinegar
  • 1 tbsp sugar
  • Juice of 1 lime

Vegan Fish Sauce (mix all in a jar)

  • 1 clove garlic, chopped
  • 1 bird’s eye chili, chopped
  • ½ tsp salt
  • 2 tbsp maple syrup
  • 1 tbsp lime juice
  • ½ cup hot water

Instructions

  1. Mix all the marinade ingredients in a large bowl. Stir to combine.
  2. Put in the cut tempeh and leave it to marinate in room temperature for 10 minutes.
  3. Heat a pan with 2tbsp olive oil.
  4. Put the marinated tempeh into the hot pan and let it fry for 4 minutes or until it is slightly golden brown. Then flip to the other side and let it fry for 3 minutes.
  5. Add in scallion, dill and coriander. Let it sit for 30 seconds.
  6. Turn off heat and add the juice of half a lime.
  7. Plate rice noodles in a bowl. Topped it with 3 slices of tempeh, some of the greens and drizzle with the homemade sauce.
  8. Mix them well and enjoy!
