1 cup unsweetened almond milk
¼ cup corn flour
1 tsp ground flaxseeds
½ tsp baking powder
2 tsp maple syrup
1 tsp vanilla essence
1 packet Angie's Organic Soybean Tempeh (200g - cut into 8 slices)
2 tbsp vegan butter

For garnishing

Maple syrup
Powdered sugar
Strawberries and blueberries

Instructions

In a shallow bowl, whisk together the almond milk, corn flour, ground flaxseeds, baking powder, cinnamon, maple syrup and vanilla.
Add vegan butter to a pan over medium-high heat and melt. Whisk the batter again right before dipping tempeh, as the corn flour will settle to the bottom of the bowl.
Dip each side of the tempeh in the batter and let soak for about 20 seconds, then add the tempeh to the pan and cook for 2-3 minutes on each side, until golden brown. Add more vegan butter to the pan as needed in between pieces of tempeh.
Serve with maple syrup, powdered sugar and fresh fruits.
Tip: Almond milk can be replaced with unsweetened soy milk.
Tip: Fruits can be replaced with other preferred fruits, such as, banana, blackberries and raspberries.
